Unlike the FCC and USP monograms which regulate based on the purity of the final product, Kosher certification is concerned with every part of the processing and sourcing. As most ethanol is fermented and distilled from grain, sugar cane or corn without use of animal materials, Kosher-compliance is not very difficult to obtain.

What does ethanol 200 proof mean?
Ethanol 200 proof means that the product contains 100% alcohol and 0% water. Contrary to a common misconception, ethanol 200 proof may only contain 100% ethanol (ethyl alcohol), or it can be a blend of alcohols that total 100%. Non-denatured ethanol 200 proof products are pure and food-grade because they only contain ethanol (ethyl alcohol). On the other hand, denatured ethanol 200 proof is a blend of food-safe ethyl alcohol (90%), and two toxic alcohols, methanol (5%) and isopropyl alcohol (5%). Essentially, 200 proof ethanol means that the product contains no water. It does not mean that it is 100% ethanol.

Is 200 proof ethanol the same as 100%?
Yes and no, it depends on what 100% means in the question. Two types of 200 proof ethanol are undenatured and denatured. So yes, undenatured, or non-denatured 200 proof ethanol is 100% ethyl alcohol (ethanol) and it contains no water. However, 200 Proof denatured ethanol is 100% alcohol, but not 100% ethyl alcohol. Lab Alley brand 200 proof denatured ethanol contains about 90% ethyl alcohol, 5% methanol, and 5% isopropyl alcohol. Methanol and isopropyl are both alcohols but they are toxic denaturants which make 200 proof denatured ethanol less expensive, but unfit for consumption and food processing applications.
