About Acetic Acid

CH3COOH. It's the sour part of vinegar, although a bottle of vinegar is mostly water with just 4 to 8% acid in it. Glacial acetic acid is basically the water taken out: 99% or better. The name comes from the way it freezes into icy looking crystals at about 16.6 °C (62 °F). Yes, a drum can go solid in a chilly warehouse. Chemically it's a weak acid, pKa about 4.76. Don't let that fool you, though. At glacial strength it burns skin, and it will catch fire, since its flash point sits around 39 °C.

COMMON APPLICATIONS

Pickling and food acidity, vinegar making, buffers and pH control, a modifier in HPLC and LC/MS mobile phases, fixatives in histology, DNA protocols, making acetate esters and vinyl acetate, textile dyeing, photo developing, plus plain old descaling and cleaning.

Glacial vs regular acetic acid: what's the difference?

Mostly water. Glacial is 99% acid or more, with next to no water, and it turns solid around 16.6 °C. Anything sold as a percentage, say our 50%, 25%, 10% or 4% solutions, has already been cut with purified water. If you don't need full strength, the solutions are a lot easier and safer to work with.

Is acetic acid just vinegar?

Sort of. Vinegar is acetic acid in water, usually 4 to 8%, with some flavor from fermentation. Glacial acid is way stronger and can burn you, so you can't swap one for the other. One more thing: our 4% and 10% solutions are Lab Grade, not food grade. For food, dilute the 99% FCC Food Grade instead.

Which acetic acid is Kosher, Halal or food grade?

Just one: Acetic Acid Glacial 99% FCC/Food Grade. It carries both Kosher and Halal certification. The USP/NF grade meets pharmacopeia standards, but it isn't listed as Kosher or Halal. ACS, Lab and Electronic grades, and the Lab Grade solutions, aren't food grade and don't have those certifications.

Do I need a permit? Will it ship to my house?

No permit. Glacial acetic acid is still regulated for shipping, since it's both corrosive and flammable (UN2789, Class 8 with a flammable subsidiary hazard). How do I store glacial acetic acid?

Cap it tight, keep it in the original container, and put it somewhere cool, dry and ventilated, away from heat, sparks and flames. Don't store it next to strong oxidizers like nitric acid or peroxides, or next to bases. Ideally keep it above 17 °C. If it does freeze, let it thaw slowly at room temperature. No direct heat.
